How do I raise my vitality without having to level up?

You can log in and use your gym reps everyday. Buying premium is also a good idea, it will gift you with extra AP.

Also you get extra gym reps and eventually an extra AP point for stats by collecting the daily log in reward consecutively.

Just wondering what the different stats do, stamina, strength, etc. What should one be working to raise first?

To make it clear,

Attack - There is a base damage here. Also sometimes using 1 of weapon at a time is better cause it somehow acts like agility. 1 weapon is easier to use than 2. The higher number of effectiveness + the number of durability = the more damage you do.

Defense - This determines what your armor can subtract from damage. Same rules apply with attack. The higher your defense and durability the more damage it reduces. Soul charged items have a 150% durability and a double effectiveness to other weapons.

Stamina - This just increases HP. Your HP scales with your level and stamina. So the more you put into it the more it will increase every level up.

Strength - This is the damage + defense stat. If you are stronger you will damage more and receive less damage from enemies. It works well with Attack and Defense.

Agility- This stat increases how fast you hit in a battle. It is important to have a higher agility than your opponents. If you don't they can attack twice as fast as you. If you have a higher Agility you can also start to attack twice as fast as them.

Endurance - This just lets the battles last longer. In less you are struggling to eliminate your opponents quickly this isn't something you need to raise. This is a common way to get stalemates and is also the most effective. If you are level 100+ there is no need to have more than 300 Endurance. At which time all your other stats could be in the thousands.
